Grapes for the production of this bright pet-nat are collected from vineyards located in the Lefkadia Valley on picturesque slopes in the foothills of the Main Caucasian Range, on clay-sandy and marl soils. The wine is made using the petillant naturelle method - the grapes are fermented in steel vats, but even before the end of fermentation, grape juice with a sugar level of 18-19 g / l is bottled, where the fermentation process is completed naturally, followed by disgorgement (removal from the sediment).
