The grapes for Mayu Pedro Ximénez wine are hand-harvested and vinified in stainless steel vats. After soft pressing and fermentation at 14-15°C, the wine matures on its lees for four months. Batonnage is performed twice a week, preventing malolactic fermentation. The wine is not aged in oak barrels, preserving its natural fresh flavor and aroma.
