Quintessence de Peybonhomme is made from grapes with an average age of 55 years. Since 2000, the vineyard has been cultivated according to biodynamic principles. Double Guyot pruning is used, herbs such as horsetail and nettle are used as an antiseptic. Fermentation takes place using local yeasts, maceration after fermentation lasts two weeks. The wine is aged in new barrels for one year. The wine is bottled according to the biodynamic calendar.
