Interesting Facts
Hakutsuru, Junmai Shu is made from an elite variety of Yamada-Nishiki rice, which is considered the best raw material for sake. The rice was polished to 60-70%. The second significant component is the so-called "imperial water" from a well near the city of Nimisomiya. It passes through the layers of limestone rocks, enriched with trace elements, so important for the fermentation of sake. Hakutsuru, Junmai Shu is produced according to traditional methods, but using modern technologies.
