Interesting Facts

Sauvignon Blanc is harvested in two stages: 15% of the green grapes in the second half of January and 85% of the fully ripe grapes in the first half of February. The harvesting takes place in the early hours by hand to leave the berries whole and thus avoid oxidation on the way to the winery. After crushing, the must is cooled, then pressed and fermented in steel tanks. The wine then ages on the lees before bottling.
