Syrah Cauquenes T.H., Undurraga
Interesting Facts
The wine is made from Syrah grapes grown in a vineyard in the Leyda Valley. The grapes are hand-picked and then carefully transported to the winery, where they undergo a meticulous selection. After partial destemming, the grapes undergo pre-fermentation cold maceration at a controlled temperature of 6-8 °C for 7 days. Fermentation takes place at a temperature of 27-28 °C for 15 days, with gentle pumping of the must three times a day to obtain the desired level of tannins and color. The wine then remains in contact with the sediment and pulp for another 17 days to improve its structure. The wine is then transferred to 5,000-liter French oak barrels, where malolactic fermentation and aging take place for 12 months.
