Aixala I Alcait is by all standards a very modest farm. They are located in the area of Torroja del Priorat, where almost all vines are divided into two camps: Garnacha and Carignan, and accordingly, the whole range of wines is produced from these varieties, with an emphasis on the Carignan variety. If you sum up your own lands and the plots they care for by paying a certain rent, then only 20 hectares of vineyards come out.
The project is in the hands of oenologist Jordi Aixala and his wife Susie, who constantly helps him in all processes. Jordi worked for 12 years on another farm in Priorat, while working on the land of his own project in the village of Torozha. In 2005, the Pardelasses project was born, the first vintages were born in the house where the family lived, and only in 2012 was it possible to find a suitable room for fermentation and aging of wines.
In 2008, it was decided to switch to organic winemaking. On the label of all wines of the Pardelasses project there is an inscription in Catalan: "These wines are the results of an illusion and the beginning of a dream." The annual production volume is 15,000 bottles. Of course, all grapes are harvested by hand, because. the terroir of the region simply does not allow machines to enter the vineyards. The harvest is collected in small plastic boxes. When the berries arrive at the winery, the stems are immediately separated and the winemaker starts fermentation. The addition of sulfites is kept to a minimum. For the past 10 years, the vineyards have been using an organic winemaking approach, respectively, all wines are made from organically certified grapes from 4 sites: Aixala, Gemini, Pardelasses and Amitxers. The plowing of the land takes place according to ancient traditions, taking into account the cycles of the moon and the temperature of the soil. Compost from sheep and cows is used as fertilizer, and green picking is practiced to improve the quality of the remaining bunches.
