Aixalà I Alcait
Aixala I Alcait is a very modest estate by all standards. They are located in the Torroja del Priorat area, where almost all the vines are divided into two camps: Garnacha and Carignan, and accordingly, the entire range of wines is produced from these varieties, with an emphasis on the Carignan variety. If you add up their own lands and the plots they look after, paying a certain rent, then you get only 20 hectares of vineyards.
The project is in the hands of oenologist Jordi and his wife Susie, who constantly helps him in all processes. Jordi worked for 12 years in another Priorat estate, while simultaneously cultivating the lands of his own project in the village of Torroja. In 2005, the Pardelasses project was born, the first vintages were born in the house where the family lived, and only in 2012 was it possible to find a suitable room for fermentation and aging of wines.
In 2008, the decision was made to switch to organic winemaking. On the label of all the wines of the Pardelasses project there is a statement in Catalan: “These wines are the result of an illusion and the beginning of a dream.” The annual production volume is 15,000 bottles. Of course, all the grapes are hand-picked, as the terroir of the region simply does not allow machines to enter the vineyards. The harvest is collected in small boxes. Upon arrival of the berries at the winery, the ridges are immediately separated and the winemaker begins fermentation. The addition of sulphites is kept to a minimum. For 10 years now, the vineyards have been using an organic winemaking approach, accordingly, all the wines are made from organically certified grapes from 4 sites: Aixala, Gemini, Pardelasses and Amitxers. Plowing of the land is carried out according to ancient traditions, taking into account the cycles of the moon and the soil temperature. Compost from sheep and cows is used as fertilizer, and green harvesting is practiced to improve the quality of the remaining bunches.
