The wine is produced using the pét-nat technology, in which the untreated must is bottled during fermentation at 22 g/l of sugar and sealed with a crown cork. Fermentation is completed in the bottle, saturating the future pét-nat with carbon dioxide. Subsequently, remuage and disgorgement are carried out to remove the yeast sediment.
