The vineyard's terroir is known for being located on an isolated plateau with soils containing light gravel from the Cenozoic era. Here are ideal conditions for cultivating Cabernet Sauvignon. The average age of the vines reaches 35 years. The harvest is harvested by hand in two stages once each variety has reached optimal ripeness. Fermentation takes place at a strictly controlled temperature of 26-27 ° C in steel and oak containers. Maceration lasts from 15 to 25 days. Malolactic fermentation takes place partly in steel vats and partly in oak barrels. The wine is aged in French oak barrels, 60% of which are new, for 12-15 months.
