Interesting Facts
Ratafia (the name comes from the drink used to ratify the treaty) appeared in Champagne around the 12th century as a way to preserve grape juice, stopping fermentation by adding alcohol. Ratafia Vollereaux is produced from two red grape varieties: Pinot Noir and Meunier (Blanc de Noir style). After fortifying the grape juice, ratafia is aged in oak barrels for two years. An ideal digestif, it pairs perfectly with cheeses, foie gras, and desserts.
