The wine is produced from Garnacha and Syrah grapes. The GoLo system—low-temperature vacuum distillation—is used for dealcoholization. GoLo operates at a lower temperature, reaching a maximum of 40°C, compared to 50°C with a rotating cone column (SCC). Furthermore, this process does not subject the wine to centrifugal forces, as is the case with SCC. Thanks to this new technology, boiling points are significantly lower than usual due to the reduced pressure, allowing the alcohol to evaporate and be collected separately from the rest of the non-alcoholic wine, before being returned at the end of the process. At such a low temperature, the alcohol can be removed gently, with minimal impact on the wine's organoleptic properties.
