The legendary ancient city of Sybaris, known today as Bon Vivants, was famous for its inhabitants who loved to live in luxury and pleasure. The wines of this line reflect a hedonistic outlook on life. The harvest is harvested by hand. The berries are pressed in whole bunches. Fermentation begins in stainless steel containers at a controlled temperature, after two days the wort is poured into French oak barrels of various sizes, where fermentation continues for about 14 days. The wine is aged on its lees in French oak barrels for 9 months.
