Chardonnay grapes are collected from Central Valley vineyards into 350-pound boxes, immediately delivered to the winery, destemmed and pressed in a pneumatic press. All vinification processes take place in stainless steel vats. Wine fermentation lasts about 16 days at a temperature of 17° to 19°C.
