Interesting Facts
The Pinot Noir grapes are hand-harvested from the Clos Charle Premier Cru vineyard in the Côte Chalonnaise. Destemming is followed by cold pre-fermentation maceration. Fermentation lasts 12–15 days, with daily manual *pigeage* (punching down of the cap). The wine is aged in Burgundy barriques for 12 months.
