Interesting Facts
Merlot from Overgaau is produced in the classic Cape Claret style. The vineyards are located in Stellenbosch Kloof, at an altitude of 180 meters above sea level. The age of the vines is more than 40 years. The berries undergo a three-day cold maceration, followed by fermentation for 9-12 days with constant pumping of the wort. 30% of the wine is aged in oak foudres (4400 liters) for 18 months. The remainder is aged in old French oak.
