The wine is produced using the Appassimento technology, when the harvested grapes are dried for 2 months before pressing. Thus, the berries lose most of the water, concentrating sugar and trace elements in themselves. Neroperso is a tribute to the age-old history of this classic method, which has its roots deep in ancient times.
