The wine is combined with grilled white fish, seafood sauté, semi-hard cheeses and white meat
Interesting Facts
The grapes were handpicked very early to maintain acidity and freshness and keep alcohol levels low. After destemming and maceration on the skins for 5 days, the grapes were pressed and the juice fermented with the natural yeast in egg shaped concrete tanks. After ageing for 7 months on the lees, the wine was bottled in June without filtration. Only a minimum of sulphites was added just before the bottling
