Elgin is one of the coolest regions in South Africa, located at an altitude of 500-700 meters above sea level. Charone grapes are harvested by hand from 15-year-old vines and subjected to soft pressing. The wine is aged in neutral oak on fine lees for 16 months. Bottling is made without filtration and addition of SO2
