Interesting Facts
The grapes for this stunning Pinot Noir come from three regions - Elgin, Elands Kloof and Hemel-en-Aarde. All vineyards are certified organic, vines are 12-18 years old. The grapes are harvested by hand in the early cool morning in small boxes and sent to the winery, where they are fermented in whole bunches for 10 days at a temperature of 30 degrees, and then remain for another 20 days in contact with the skins. Exposure takes place in large old French oak barrels of 2000 liters for 11 months. The wine is bottled without filtration and the addition of sulfites.
