Interesting Facts
Cabernet Sauvignon is harvested from low-yielding vineyards grown on the soils of their crushed granite and gravel top layer with the presence of quartz. Merlot for this blend is collected from more clay soils, rich in iron and perfectly performing the functions of a sponge, retaining moisture. Cabernet Franc grows on stony vineyards with a 20% share of clay, which is the optimal terroir for the manifestation of varietal characteristics of this grape. A green harvest is held annually to reduce overall productivity and increase berry concentration. Each variety was collected one after another, based on the degree of maturity and fermented separately in small vats. The total aging in the barrel was 20 months, among which 67% were new Alliers oak barrels and 33% were second-passage barrels from Alliers and Nevers.
