This magnificent Sauvignon Blanc is a true reflection of the local terroir and manifests itself in the glass as an incredibly lively, vibrant and complex wine. The grapes are harvested upon reaching full phenolic maturity in separate blocks, each of which is vinified separately. Maceration on the skin lasts 3-9 hours, followed by pressing. Alcoholic fermentation takes place in steel vats for 3 weeks at 14-16 degrees. Aging on the lees also takes place in steel and lasts about 2 months.
