Sauvignon Blanc grapes are sourced from the estate's prime sites in the Martinborough region, a rising star of New Zealand winemaking. The cool, dry terroir allows the grapes to ripen gradually, enhancing the concentration of aroma and flavor. After gentle pressing, the must is fermented at low temperatures to preserve the vibrant fruit aromas. The wine then undergoes brief maturation in stainless steel tanks.
