Waterkloof Circle of Life white, Stellenbosch
Interesting Facts
Circle Of Life white wine changes its varietal composition from year to year and the grapes are always collected from different areas, with different ages of vines, altitudes, terroirs and exposures. The label shows the life cycle of the vine from the beginning of flowering to the transition to hibernation. After pressing, the resulting must of Sauvignon Blanc and Chenin Blanc is placed in old oak barrels of 600 liter format and a small proportion settles in steel vats. Fermentation with wild yeast lasts for 7 months, after which the wine spends 4 months on the lees. Afterwards, the resulting wine is poured into a large steel vat, into which small portions of Chardonnay and Semillon have already been added.
