Interesting Facts
The name A Pèl translated from Catalan has two meanings: “without hair” - like a person on the label, or “without protection” - like this natural wine without added sulfur. Fermentation of wine is carried out by the Pét-Nat method (Petillant Naturel). It starts in 700 L clay amphoras (15% in contact with the skin) and ends in bottles. Only wild yeast is used for production. Within 9 months the wine is aged on the lees.
