Interesting Facts
Chardonnay grows on clean calcareous soils in the villages of Aviz, Auger and Cramant; Pinot Noir vines - on a mixture of chalk and clay in the village of Verzenay. The age of the vines is from 20 to 30 years. Manual collection. Chardonnay is pressed directly in a manual vertical wooden press and fermented with specially selected yeasts in temperature-controlled stainless steel tanks. Pinot Noir is vinified like a red wine with maceration for 1 month and a short aging in French oak. Aging on lees in bottle - 30 months.
