Interesting Facts
The wine is made from three varieties - Pinot Noir, Trousseau and Pulsar. After de-stemming, the grapes are macerated for a month with pijagé (the first fifteen days - to extract the color). Fermentation with skins at temperature control takes place on local yeast. Each variety is separately aged in stainless steel tanks for 11 months. Blending, light filtration, bottling without fining and with a minimum amount of sulfur.
