Interesting Facts
Mtsvane is produced in the company's own vineyards, which are located in the Kvareli and Kindzmarauli zones, where traditionally high-quality wines are produced. The quality is due to rich alluvial and black shale soils and the favorable influence of the Caucasus Range. The grape harvest (only healthy bunches) takes place in early October. After destemming, the grapes are crushed and the must is separated by gravity. After processing and cleaning the wort, its alcoholic fermentation occurs at a temperature of 14-16° degrees under strict control. When the remaining sugar in the fermented wine reaches 15 grams per liter, the fermented mass is quickly cooled to -2 degrees, stopping fermentation.
