Interesting Facts
The grapes are collected in the vineyards of the economy in the valley of Hemel-en-Aarde. Age of vines - 14-21 years. Berries are carefully picked and immediately sent to the winery, where the bunches are sorted, destemmed and sent to the fermentation tank. During the production process, sulfites are not added to the wine, except for those that are formed during the fermentation process. The grapes spend 20-25 days in contact with the skins before being pressed. Next, the wine goes through an 11-month aging in Burgundy barriques (volume 228 liters). About 10% of barrels are new. The final aging takes place in steel (3 months), bottling takes place without filtration
