Interesting Facts

The Assyrtiko grape variety is born on vines over 120 years old. Fermentation of wine takes place in stainless steel, where after the wine is aged on fine lees for 10 months. Before release, Pyritis spends an additional 5 months in the winery's cellar in bottles. This is a complex, deep, meditative wine that gradually develops in the glass and has the potential of 10-15 years.
