Interesting Facts
Sauvignon Blanc grapes are harvested from 28-year-old vines located in Stellenboschkloof. After pressing, the wort undergoes a short cold maceration for 8 hours. Fermentation takes place in stainless steel vats for 21 days at a temperature of 13-15 degrees. After fermentation, the wine is aged on the lees for 3 months before bottling.
