Interesting Facts
The Savagnin grapes are hand-picked from vines over 35 years old. Whole bunches are pressed with a pneumatic press. After settling, the must is fermented with local yeast at low temperatures to preserve the characteristics of the grape variety. The wine is aged in barrels for 30 months under a thin yeast film - flor. Light filtration, bottling takes place without fining and with a minimum amount of sulfur.
