Chardonnay grapes are collected in two hot regions of the country at once - Puglia and Sicily. The fermentation of the wine takes place in contact with the skins, in stainless steel vats and clay amphorae. After fermentation, the skins are left in the wine for another 45-60 days. 50% of the wine is aged for 5 months in American and French oak
