Interesting Facts
The Kars (Karst) region is a virtually solid limestone plateau located between the Vipava River valley and the Gulf of Trieste. The vineyard area is only 1.2 hectares. Maceration on the skin lasts 7 days in open vats. The grapes are pressed by hand and fermented with wild yeast in 15 hl open wooden vats. Then, the wine is poured into large wooden vats and aged for 2 years with periodic buttoning. The wine is not clarified or filtered before bottling, and the sulfite content here is only 9-11 g / l.
