Interesting Facts
The Xinomavro variety is called the "Greek Barolo". The name of the variety translates as sour (xino) and dark (mavro) due to the high acidity and dark color in the wine. The most long-lived wines in Greece are made from this variety, which can develop in a bottle for 25-30 years. The grapes for Nausey Fundi are harvested in late September / early October, depending on climatic conditions and degree of ripeness. Fermentation is carried out in stainless steel vats with ridges. After that, the wine is aged for 12 months in French oak and at least two years in the bottle.
