The wine is pale in colour, with a beautiful green tint.
Taste:
The palate is delicate with elegantly clean and zesty lime notes with great textural feel of the mid palate. There is a great interplay between the naturally retained residual sugar and acidity. Generally regarded as restrained, it displays typical Riesling ‘nervousness’. The mineral core, which is linked to the shale rich soils in which the vines grow, adds great complexity, structure, and the lingering after taste.
Aroma:
This is an expressive wine with a melody of fresh fruit and citrus blossom notes.
Gastronomy:
The wine goes well with spicy dishes, sushi, carpaccio and meat tartare.

Interesting Facts

The grapes for this wine were picked at night to ensure their freshness. The berries were sorted twice: in the vineyard and in the cellar. Only the "free run" juice is allowed to ferment. 30% of the must is fermented in large oval oak vats with a capacity of 2,500 liters. Fermentation of the must batches with the highest acidity is stopped forcibly. Wines with a lower sugar content are left to mature on the sediment, which gives the future drink body and roundness. After blending, the wine is stabilized and bottled.
