Interesting Facts

The wine is made from 100% Savagnin. After harvesting the grapes at a high ripeness, with low yields from the vines (20 hl/ha) and spontaneous fermentation in vats, the wine is aged in old oak barrels for at least 6 and a half years, without topping up or sulphitation, under a natural veil of yeast (flor). The classic bottle size for this style is 620 ml. Each bottle is labelled and waxed by hand.
