Apollonio

The history of the Apollonio winery begins in 1870, and today has 150 years of passion and enthusiasm from 4 generations of winemakers. This family business is closely linked to Salento. It uses the latest techniques for wine production, based on the experience and traditions of the ancestors. Since the Puglia region is rich in autochthonous (local) varieties, production is concentrated around them: Primitivo, Negroamaro, Malvasia Nera.

The production process begins with a careful selection of grapes harvested from the "albarelli pugliesi" vines. Maceration lasts up to 45 days in large Slavonian oak barrels to increase the tannin content and obtain a rich color. Further, the wines are aged in French oak (Malvasia, Negroamaro), American oak (Primitivo), as well as in acacia barrels (for white and rosé wines). After, the wine rests in large barrels, with a volume of 30-50 hectalitres. Also, the wine is aged in the bottle (at least 6 months). In addition to bright red wines, bright, young, fruity wines are produced here, aged in stainless steel for only a few months.
