Interesting Facts
The wine is a union of two varieties: Negroamaro is responsible for the body and depth of the blend, while Montepulciano gives the wine its bright acidity and fruity freshness. Fermentation takes place in large Slavonian oak barrels at a temperature of 27-28 degrees, with periodic remontage. Maceration on the skins lasts 30 days, and the YMB takes place in barriques. Aging lasts 24 months in French Berce barriques (very dense oak), plus 6 months in large barrels (30-55 hl) made of Slavonian oak and an additional 12 months in the bottle before bottling.
