Interesting Facts
The Chardonnay grapes are harvested exclusively by hand from granite soils. Only the best part of the juice (the first 40%) is used for wine production. Aging takes place for 11 months mainly in 500 l barrels and a few barriques (228 l) produced in Burgundy, with 31% of the total volume aged in stainless steel. New oak makes up 11% of the final blend. The wine is further aged for 5 months in stainless steel, without clarification, coarse filtration or sulphur adjustment before bottling.
