To produce wine, they use one of the most popular white varieties in the country - Chenin Blanc. After harvest, the grapes are destemmed, lightly crushed and cold macerated in contact with the skins for several hours. Then gently press and leave the juice for 2 days at a temperature of 10 degrees. Next, the wort undergoes cold fermentation at 12 degrees and aging on lees for 3 months in steel.
