Interesting Facts
Criolla vines, over 50 years old, grow on the Las Mercedes estate. Once they reach optimal ripeness, the grapes are hand-picked early in the morning into 18-kilogram containers. Preliminary maceration takes place in 3,000-liter oval steel vats for five days. Fermentation begins with the whole berries. The juice is then separated and allowed to ferment naturally. The wine is bottled without filtration and aged for another 6-8 months before release.
