Pinot Grigio is a grape variety that has found its ideal home in Trentino. The variety has a greyish skin (hence its name) and this allows it to be used to produce rosé wines by means of a short maceration on the skins. The wine is fermented in steel for 8 days. The wine is also aged in steel on a fine yeast sediment.
