Interesting Facts
The Xinomavro variety is called the "Greek Barolo". The name of the variety translates as sour (xino) and dark (mavro) due to the high acidity and dark color of the wine. This variety produces the longest-lived wines in Greece, which can develop in the bottle for 25-30 years. The harvest is collected in late September / early October, depending on climatic conditions. Fermentation takes place in stainless steel tanks. Maceration on the skins and bunches lasts up to 20 days (depending on the quality of the harvest). After malolactic fermentation, the wine is aged in French oak for 10-12 months and about a year in the bottle before sale.
