Casina Degli Ulivi ("Farm in the Olive Grove")

Since 1985, 16 hectares of vineyards have been cultivated by this farm using only biodynamic methods. The Belotti family has owned this farm since 1930 and is currently run by Stefano and his wife Zita. They share the fundamental beliefs of biodynamics and run a restaurant and organic farm in the town of Tassarolo (Gavi province). “We see the soil as a“ friendly organism ”for all living things. In working in the vineyards, we foster the potential harmony of all forces that help the flow of vitality, ”says Stefano Belotti.

For harvesting, only small boxes with a capacity of no more than 20 kg are used. Fermentation takes place only with "wild" yeast. Oak barrels - only large (25-50 GL) and old. Filtration is minimal - only a mesh filter is used before bottling.
