Interesting Facts
The wine is fermented with natural yeast. Partial malolactic fermentation, light filtration to preserve the original shades. After primary fermentation, the wine is aged on the lees in stainless steel vats for 8 months. 20% still red wine is added to the cuvée. Before secondary fermentation, reserve wines are added with a minimum aging on lees of 2 years. Aging on the lees in the bottle is a full 7 years! The result is a “nervous”, but at the same time beautifully structured wine.
