All wines undergo malolactic fermentation. Pinot Noir berries are not crushed, but completely separated from the cuttings and placed in stainless steel tanks for 4-6 days for cold maceration. Further fermentation, triggered by natural yeast, lasts about three weeks at a controlled temperature, which is required for the full extraction of all aromatic substances from the grapes.
