Interesting Facts

The wine comes from a plantation located in Sant Pau d'Ordal, in the eastern part of the Alt Penedès region. The shallow, yet highly water-retentive clay-calcareous soils allow the Pinot Noir vines to grow in ideal conditions. Angel is a Blanc de Noir, so whole berries are pressed for its production, without maceration on the skins. Only the first fraction, colorless, delicate, and elegant, is used. Secondary fermentation follows 36 months of contact with the lees under natural cork. Remuage is performed manually, as is disgorgement.
