Interesting Facts

The wine is made from Nebbiolo grapes grown in a vineyard called Montesommo (Montesommo), located opposite the Bordini district in the municipality of Neive (Cuneo). The harvest takes place towards the end of October. After pressing, the wort is subjected to traditional maceration. Fermentation with the addition of wild yeast lasts up to 30 days at room temperature and takes place in steel vats using remontage techniques and regular immersion of the cap. The maturation of the wine lasts about 24 months in Slavonian oak barrels (30-50 hl). Before going on sale, the wine is aged for an additional 24 months in the bottle.
