Interesting Facts
Grapes for Cartology are harvested from vines up to 50 years old. The berries are collected and sorted by hand. Whole bunches (along with pulp) fall into the press. Fermentation takes place in cement “eggs”, clay amphorae, foudres and old barrels of various sizes from 3 weeks to 11 months. The wine was aged on the lees for about a year and a half before bottling. The name of the wine refers to the science associated with the search for new lands, which perfectly reflects the process of searching for the best sites for the production of this wine.
