Interesting Facts
At Rustenhof Farm (south of Stellenbosch) there is a small granite hill called Sinai. The hillside is planted from top to bottom with Chenin Blanc vines. Nautical Dawn is born on vines planted in 1978 at the top of the slope. Since its first harvest in 2017, the wine has been able to showcase the raw potential of the False Bay coastline. The grapes are pressed in whole bunches. Fermentation with natural yeast takes place in a foudre with a capacity of 2000 liters and several old barrels of different sizes for 2 months. Before bottling, the wine undergoes aging on the lees for one and a half years.
